• 2 chicken breasts
• 2 tbsp sun dried tomatoes
• 2 tbsp feta cheese
• 2 tbsp olives
• 1 tsp minced garlic
• 1 tbsp pine nuts or sesame seeds
• 1 tbsp balsamic vinegar
• Coconut Oil
Pre heat the oven to 220. Throw together all of the ingredients in a bowl. Slice each chicken breast with a knife and stuff the pocket with the ingredients in the bowl.
Smear a little coconut oil on each chicken breast and cook in the oven for 20 minutes.
I served this with a little brown rice cooked in chicken stock.
